A Baked Recipe Using Ghee

When we look back on our childhood, we often recall the times when we used to ask our mothers for an extra dollop of ghee on our roti. A simple pleasure that brought us immense joy! However, as we grew up and moved away from home, we may have forgotten about these small joys, including the joy of indulging in ghee-lathered chapatis. Interestingly, as we got older, our mothers started encouraging us to eat more ghee. Have you ever returned home and had your mother happily slather extra ghee on your roti, saying, "You`ve lost so much weight!"

It turns out, ghee can be a delicious addition to not only our traditional meals but also our baked goods and healthy meals. We have an amazing recipe for "Oatmeal Raisin Ghee Cookies" that are both nutritious and delicious. You can easily make these at home and store them in an airtight jar to munch on.

Ingredients

  • 1½ cups Maida (all-purpose flour)
  • 1 tsp Baking Soda
  • ½ tsp Namak (Salt)
  • 1 tsp Dalchini Powder (Cinnamon Powder)
  • 1/2 tsp Adrak Powder (Ginger Powder)
  • 1/4 tsp Jaiphal Powder (Nutmeg Powder)
  • 1/2 cup Ghee, at room temperature
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 Large Egg, at room temperature
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Rolled oats
  • 1 cup Kishmish (Raisins)

Step-by-Step Instructions

1. Preheat the oven to 180°C.
2. Add maida, dalchini powder, adrak powder, jaiphal powder, baking soda, and namak to a large bowl.
3. Now whisk these ingredients together.
4. If you have a hand blender or electric mixer, use it to blend the large egg, ghee, vanilla extract, granulated sugar, and brown sugar together in a large bowl.
5. Continue blending on medium speed for about 2-3 minutes until well combined into a smooth creamy consistency.
6. Gradually add the flour mixture to this large bowl while beating on a low speed so that everything blends uniformly. Make sure to only add small portions of flour each time to ensure it’s mixed well.
7. Now add raisins and rolled oats to this mixture. Mix it all together with a spatula until evenly distributed.
8. Line your baking tray with parchment paper. Make sure to check if the oven is preheated. In case you forgot, there is still a chance!
9. It’s time to roll the dough into cookies. Scoop out the dough with a spoon and shape in the form of cookies. Push the cookie with your fingers so that they are of the same thickness.
10. Place the cookies at least 2” apart as they will expand during the baking process. So, you will have to cook them in batches.
11. Keep the baking tray on the upper third of the oven.
12. The cookie’s edges will turn light golden brown when ready.
13. Cool the cookies for 5-10 minutes before you serve them or store in a container.
