Coconuts are a wonder! In the culinary kingdom they're almost revered for the world of textures and flavours they introduce to a dish, be it savoury or sweet. Why not try out a sweet made of coconut this time? Ekta Sharma shares a simple Coconut Barfi recipe to add a touch of sweetness to #JerseyGheeStories.
- 1 Coconut
- 1-1/2 tbsp Jersey Ghee
- 1/2 cup Condensed Milk
- 2 Cardamom
- 1/4 cup Milk Powder
- Take 1 fresh coconut and remove its flesh using a knife. Wash it once and grate it. Grind it into a coarse powder for 5 to 10 seconds.
- Add 1 tbsp Jersey Ghee to a pan to melt. Add the grated coconut and roast it on medium flame for 5 minutes. Add the milk powder and condensed milk and stir continuously until it reaches a thick consistency. Add cardamom powder and mix it properly. Switch of the flame.
- Take a plate and grease it with Jersey Ghee.Transfer the mixture to the plate and spread it evenly. Garnish with finely chopped almonds and pistachios.
- Let it cool down to room temperature or refrigerate for 30min and then cut it into pieces.
